Founded in 1977 by Aldo Bottega, a master distiller with over three decades of experience, and his wife Rosina Zambon, Distilleria Bottega started as a small business in the local grappa market. Following the founder's passing in 1983, Aldo's children Sandro, Barbara, and Stefano took over the company. Under their leadership, Distilleria Bottega gained recognition by introducing an innovative distillation system that enhanced the smoothness and delicacy of Grappa.

In 1992, the company diversified its product range with the creation of Il Vino dei Poeti, a sparkling Prosecco that expanded its presence in the wine market. The collaboration with designer Monica Lisetto and Stefania Sandrelli further enhanced the uniqueness of Bottega products. This period also saw the introduction of Chianti Acino d'Oro. Additionally, Fragolino, a traditional drink, was launched in 1995, revolutionizing the beverage sector.

After a decade of research, Bottega Winery opened a new distillery in Pianzano (TV) that utilized triple distillation, vacuum, and bain-marie techniques, resulting in the production of soft and aromatic distillates.

The early 2000s marked the launch of Bottega Gold, a Prosecco Doc renowned for its golden bottle, which quickly became an Italian taste icon and achieved tremendous commercial success.

In 2007, the company's headquarters, known as Villa Rosina, was inaugurated in Bibano. This renovated 19th-century farmhouse adheres to the highest environmental protection standards.

Between 2009 and 2011, the company expanded its wine production to Valpolicella and Montalcino. Additionally, Bottega Winery completed the meticulous restoration of a historic wine cellar in Valgatara, which was acquired by the company three years prior. Surrounded by vineyards, the cellar holds significant architectural value.

In late 2019, the Bottega group acquired a winery in Montalcino, further expanding its presence within the denomination. The first winery in Valgatara produces the renowned Amarone della Valpolicella and Ripasso wines, while the second winery in Montalcino gives birth to Brunello, the prince of Italian wines.

In 2013, Distilleria Bottega Srl transformed into Bottega S.p.A., marking a significant milestone for the company.

Among its notable achievements is the Prosecco Bar project, launched in 2014. This initiative reintroduces the philosophy of Venetian bacaro, combining Venetian and Italian cuisine with Bottega wines and spirits. Today, the Prosecco Bar has expanded to 32 locations worldwide, including airports, train stations, cruise ships, and hotels.
