The area is famous for its elegant and complex wines. The red wine Bolgheri DOC Il Bruciato was created by a blend of three great French vineyards, the cabernet sauvignon (65%), the merlot (20%), which gives softness and harmony to its taste and the syrah (15%), which brings the typical spicy notes in the final aftertaste. The olfactory profile is intense and complex, with a fruit fragrance and sweet, delicate spicy notes. The palate is full-bodied, characterized by deep aromas and freshness. The finish is long and persistent.

 

The grapes ferment for almost 10-15 days, partly in Barrique and partly in stainless steel tanks at a high temperature of 28-30° C (82-30° F). Only a part of merlot and syrah will be fermented at lower temperatures, in order to extract and store better the fragrances. After a first period, the wine ages for 8 months in French oak barrique and completes its aging with further 4 months in bottle.

 

How to serve it? You should drink it between 15° and 18° C. It also could be drunk, just after being opened. At the table, it is best paired with first courses with meat sauce and with second courses of roasted and grilled red meat, stewed meat and game, typical substantial Tuscan dishes. 

 

  • Tommasi Il Sestante Amarone della Valpolicella DOCG: A red wine that is produced from three kinds of grapes from the area: 70% of Corvina Veronese, 25% of Rondinella and Molinara for the last 5%. The name recalls the cultivation area of the vines and, in the existing 8 hectares, there is also the Monte Masua vineyard, where grapes grow in an exceptional way. It is an imperial and deep ruby red wine, with fruit fragrances of ripe black cherries, cherries in liqueur, blackberries and black current, followed by spicy notes like black pepper and a small touch of cinnamon. The taste is powerful and very warm, with a final aftertaste of spicy notes. Grapes are dried for about 5 months in a fruit cellar and only afterwards they are transferred to the cellar, where fermentation takes place in steel tanks, then the wine is aged in large Slavonian oak barrels for about 36 months.

 

 

How to serve it? At ambient temperature, between 17° and 20° C.  It is suitable for dishes such as stewed game, roast meat or with platters of mature and excellent cheeses typical of the area and beyond.

 

  • Frescobaldi Castiglioni Chianti DOCG: The Chianti Castiglioni, by Frescobaldi, is produced in the vineyards of the homonymous estate, located in the Chianti DOCG area. It is located in the hills of Val di Pesa, among mild and fresh climates with Tyrrhenian breezes. This wine has a ruby red color with violet hues, aroma of fruity notes of cherry and strawberry with floral hints. The taste is smooth and warm with a long finish.

 

It is mainly produced with Sangiovese and Merlot grapes, harvested and selected entirely by hand. Fermentation takes place, with maceration, in stainless steel tanks at a controlled temperature for 11 days. Afterwards, the wine is refined in steel for 6 months with micro-oxygenation, and then it rests for 30 days in bottle before being commercialized.

How to serve it? It is served after 15 minutes from the opening. Perfect to accompany important first courses, such as pappardelle with meat sauce, but it is also ideal with roast chicken, red meats with vegetables and mature cheeses.
