Torcicoda Tormaresca Primitivo is made from 100% pure Primitivo grapes and holds the prestigious Salento IGT certification. The vineyards selected for this wine include old Alberello-trained Primitivo vines, as well as those from Masseria Maìme in San Pietro Vernotico, grown using the spurred cordon system in the province of Brindisi. The grapes are carefully harvested when slightly ripe, usually in the first week of September.
After pressing, the maceration process begins, lasting 15 days in stainless steel tanks, using gentle délestages and controlled replacements. Alcoholic fermentation is completed at a temperature not exceeding 26°C. After racking, the wine undergoes malolactic fermentation in French and Hungarian oak barrels, where it ages for 10 months. Before being released to the market, the wine further ages in the bottle for 8 months.
